Green beans have a round shape, green color, crisp texture and a mildly sweet yet earthy flavor. They originate from South America where they were first cultivated by the Maya and the Inca civilizations before being brought to Europe. They became available in Greece in the middle of the 17th century. They are particularly nutritious owing to their high protein content, and are also a source of fiber and vitamins.
