Flat beans have a bright green color, crisp texture and a mildly sweet yet earthy flavor. They originate from South America where they were first cultivated by the Maya and the Inca civilizations before being brought to Europe. In the middle of the 17th, century they were introduced to Greece, where they are now widely grown. They are a rich source of protein as well as fiber and vitamins, and can therefore contribute to a balanced and healthy diet.
