Chicory, otherwise known as Cichorium intybus, is a herbaceous plant that produces leafy greens. Due to its high resistance to low temperatures, the plant yields leaves most of the year, apart from summer, though we harvest it in April when the plants are at their best. Originating from Eurasia and Northern Africa, chicory has many health benefits due to its high protein, vitamin and fiber content.
