1000g packet of Barba Stathis okra extra
500g packet of Barba Stathis Grated Tomato
1 cup of Barba Stathis DIced Onion
2 tbsp of Barba Stathis Diced Garlic
3 tbsp of Barba Stathis Chopped Parsley
5-6 spring onions, finely chopped
3 tbsp of fennel, finely chopped
1 tsp of paprika
1 small spicy pepper (optional)
A few grains of allspice
1 cup of dry white wine
A pinch of salt, freshly-ground pepper

Directions
  1. Heat a cup of oil in a pot and sauté the finely-chopped onion over a medium heat.
  2. Once the onion has softened, add the spring onion, fennel, parsley, tomato, garlic, hot pepper (optional), allspice and allow the sauce to boil for around 35 minutes.
  3. Meanwhile, fry the okra with the rest of the oil for 7-8 minutes and set aside.
  4. Pour the wine into the tomato sauce, add the okra and salt and pepper and boil for approx. 30-35 minutes
